Job Summary

The Chef De Cuisine will be responsible for the overall operation of the kitchen to give maximum satisfaction and quality to the guests while ensuring profitability for the hotel. The role includes maintaining hygiene and cleanliness throughout the kitchen to uphold the highest food safety standards.

Responsibilities
  • Oversee the consistency of various preparations within the cold kitchen to ensure quality product and adherence to standard recipes.
  • Place orders for products needed for events and ensure proper quality upon receipt.
  • Prepare all cold food according to recipes, guidelines, and standards set by the Executive Chef or hotel standards.
  • Ensure that the assigned work area has an appropriate level of par stocks and supplies according to daily production sheets, daily menus, and banquet events.
  • Keep all refrigeration, equipment, storage, and working areas clean and in compliance with health department regulations.
  • Check and control proper storage of product, focusing on portion control and specific cuts of meat to maintain quality.
  • Delegate and assist in preparing cold food items such as salads, sushi, cold cuts, and salad dressings.
  • Prepare daily requisitions for supplies and food items for production.
  • Prepare all dishes following recipes and yield guides.
Qualifications
  • Solid experience as Chef De Cuisine in hotels.
  • A leader with the ability to coach, train, and develop others.
  • Fluent in English.
  • Strong leadership, self motivation, and excellent communication skills.
